Default Advice for Catahoula Leopard dog

We just adopted a Catahoula Leopard dog about a week ago. He was nervous around us for the first few days and whenever we would try to touch his collar to move him he'd growl at us. He's stopped doing that and doesn't run from us anymore, but he's a very high energy dog. We take him on daily walks/runs and he has a lot of time outside in our fenced in yard to run and play with our other dog. He knows how to sit, and we've taught him how to lay down, but he's so excited when you work with him, it's hard to keep his attention so that he can figure out what we're even asking him. Any advice on how to tone him down a bit to get him focused?
